Smokey Barbeque Sauce
3 cups ketchup
1/2 cider vinegar
1 cup molasses
1/3 cup honey
6 ounces chipotle peppers in adobo sauce
1 small onion, finely diced
1 1/2 teaspoons garlic powder
2 teaspoons ground mustard
1 1/2 teaspoons paprika
1 1/2 teaspoons ground coriander
2 tablespoons liquid smoke
1 teaspoon salt
1 1/2 teaspoons black pepper
2/3 cup whiskey (Jack Daniels or a good bourbon)
Add all ingredients to a pot, cover and simmer over low heat for 1 hour until thickened. Cool. Use immediately or store in tightly covered jar in refrigerator.
