This is actually an easy recipe, and a healthy one:

Peanut Butter-Pumpkin Cookies or Biscotti Snack Sticks

Preheat oven to 350F (175C)

Lightly grease bottom of cookie sheet.

Ingredients:
1 cup regular or wheat flour
2 cups ground oatmeal
1/2 cup canned pumpkin or cooked sweet potato, mashed
1/4 cup peanut butter, creamy or crunchy
2 tablespoons molasses (can use 1/4 cup dark brown sugar as alternative)
1/2 teaspoon cinnamon
1/4 teaspoon ginger
1/1 teaspoon salt
1 teaspoon vanilla extract
2 eggs

Mix all ingredients in a large bowl until a stiff dough forms. If the dough is too stiff, slowly add water 1 tablespoon at a time until dough pulls away from sides and bottom to form one smooth dough ball. If dough is still sticky, add flour 1 tablespoon at a time until it is no longer sticky.

For Snack Sticks, press into the bottom of a cookie sheet and cut as you would for narrow bars. For cookie shapes, drop by teaspoonfuls onto greased cookie sheet and gently flatten with a fork as you would for peanut butter cookies.

Bake at 350F for 20-25 minutes or until golden brown on top. Sticks should be firm but not too hard. After all, we don't want to break teeth on them and a little chewy is good.

Now the good part of all this: These are healthy for adults, kids, and dogs who absolutely adore them and don't know they're actually good for them! If desired, a drizzle of 1/2 cup confectioner's sugar, 2 tablespoons peanut butter, 2 tablespoons milk stirred until thin and drizzly can be drizzled over the tops after the batch has cooled. Allow to dry before storing.

Store in air-tight containers or Zip-Lock baggies. Will last until they're gone. I don't know. Mine never last more than a week.
